“Egg McMuffin” Makeover!

We’ve all heard it… “Breakfast is the most important meal of the day”! Well, it’s true!! And, while I feel that every meal matters, I know that a clean, nutritious breakfast is extremely important in order to start your day off right! After fasting all night, you need a good breakfast to re-fuel and provide the energy you need to get going. Studies show that eating a healthy breakfast increases the metabolic rate, sustains energy levels, and helps with weight loss. But, over and over again I hear people saying “I don’t have time to eat breakfast” or “I’ll just grab a coffee and a pastry”. Well, a latte does not constitute as breakfast, pastries are not figure friendly, and, while mornings can be hectic, you do have time to eat a clean meal!

Not sure what to eat? Don’t know how you’ll have time? Well that’s where I can help! My mornings can be crazy, but with a little preparation I never miss breakfast! I make it easy on myself by preparing my breakfast ahead of time. I cook about 3-4 days of breakfast at the beginning of the week so that I can just grab it and go! By doing this, I know exactly what I am eating and I am always prepared.

For me, preparation is key, especially when I am getting ready for a competition. At this time, I am currently prepping for the Pittsburgh Pro Bikini Competition in May, so following my diet that my coach, Kim Oddo, creates for me is crucial. Eating breakfast is not only extremely important, but it’s also my favorite meal of the day because I can be so creative with it! The drive-thru is not an option for me and it doesn’t have to be for you either!

Now, you’ve probably heard that egg whites and oatmeal are staples in a clean diet… and, while that is true, those items are often viewed as bland and boring. But, they don’t have to be! You deserve to enjoy your breakfast and I will show you how!

Right now my breakfast on my diet consist of egg whites, oats, and ground turkey! Boring?? Not anymore! In the recipe below, I’ll show you how I transformed those foods into an amazing breakfast sandwich! With a little before-hand preparation, this sandwich is convenient and great for eating on the go. And, most importantly, it’s a complete breakfast meal packed with protein and complex carbs to help you kick-start your day the right way!

“Egg McMuffin” Makeover!


For the “Pancakes/Buns”:
1/3 cup ground oats
2-3 packets stevia
1/2 tsp cinnamon
1/2 tsp baking powder (Hain brand: no sodium)
2 egg whites
1/2 tsp vanilla extract

For the “Turkey sausage”:
2 oz lean ground turkey
1 tsp sugar-free maple syrup (optional)
1/4 tsp ground sage (optional)
1/8 tsp allspice (optional)

For the Egg:
1 egg white


This sandwich can be cooked in the oven by using a baking pan like the one shown or on the stove by using a 6inch pan! If using the baking pan, Pre-heat your oven to 350 and spray pan with non-stick spray.

For the “Pancakes/Buns”:
1. In a medium mixing bowl combine the dry ingredients until combined. (ground oats, stevia, cinnamon, and baking powder)
2. In another bowl whisk 2 egg whites and vanilla until lightly frothy.
3. Pour the wet into the dry and whisk together until a uniform batter forms.
4. Pour equal amounts of the batter into 2 sections of a baking pan like the one shown.
5. If you are cooking these on the stove, place a 6inch pan sprayed with non-stick spray over medium heat. Cook 2 equal size pancakes on the stove for about 2 minutes on each side.

For the "Turkey Sausage":
1. Weigh out 2.5oz of uncooked ground turkey (shrinks to 2oz when cooked).
2. Mix in spices and sugar-free maple syrup, if using, and form into a patty to match the size of your pancake.
3. If using the baking pan shown, place the turkey in a section and flatten it out to fit the space.4. If cooking on the stove, cook over medium heat until fully cooked.

For the Egg:
1. Crack the egg white into a section of the baking pan shown. If cooking on the stove, crack the egg white in a 6inch pan over medium heat and cook for about a minute on each side.
2. If you are using the baking pan, you should have 2 sections filled with the pancake mix, 1 section filled with the turkey, and 1 section filled with the egg white!
3. Place the pan in the pre-heated oven and bake for 20 minutes!
4. Take the items out of the pan, assemble into a sandwich and ENJOY!

Tip #1: If you are cooking everything on the stove, cook the pancakes first and set aside, then cook the turkey patty and set aside, and lastly, cook the egg white. Assemble your sandwich and ENJOY!

Tip #2: Cook a few sandwiches at the beginning of the week so you can grab and go in the morning. The sandwiches will stay good in the fridge for up to 4 days. To reheat, wrap the sandwich in a paper towel and place in the microwave for 30-45seconds.
