Chocolate Coconut Protein Cookies
Feed your muscles with these delicious high-protein cookies
3 tbsp coconut flour
3 tbsp chocolate protein powder
1 tbsp Xylitol or Stevia
1/4 tsp baking powder
3 tbsp unsweetened almond milk
2 tbsp nonfat Greek yogurt
1 egg white
1 tbsp natural peanut butter
6 tsp unsweetened shredded and chopped coconut (1 tsp each cookie)
1. Preheat oven to 325 degrees.
2. Combine all dry ingredients in a small bowl (reserving shredded coconut for later). In another bowl, blend wet ingredients. Add dry ingredients and thoroughly mix until makes a stiff dough.
3. Roll dough in to 6 even cookie balls. Dip each cookie in shredded coconut before placing on cookie sheet lined with parchment paper. Gently press cookies down to ½” thick.
4. Bake for approximately 15 minutes or until cookies are semi-firm.
