Holiday Cooked Cranberry Eggs

Makes 1 bowl

1/4 cup dry cream of rice cereal
1 cup water
dash sea salt
1 whole egg
5 egg whites
2 tbsp unsweetened cranberry juice
1 1/2 tbsp unsweetened dried cranberries
1 tsp vanilla extract
stevia to taste

Add sea salt and water to cream of rice and cook per package instructions. Once cream of rice has thickened up (around 3 minutes), add in all remaining ingredients. Cook and stir frequently over medium heat until eggs are cooked through. Sweeten with stevia to taste. Serve immediately!
