STRAWBERRY SPINACH CHICKEN SALAD WITH CREAMY LEMON DRESSING
Who has the time anymore to prepare healthy meals daily without sacrificing much needed personal time? Beat the clock with this quick, gourmet salad, both high in protein and low in fat. Better yet: it only takes 20 minutes to prepare!
















Serve this pretty salad with a loaf of fresh whole-grain bread.

Serves 4

Salad

10 oz. pre-washed fresh spinach
12 oz. oven-roasted diced chicken breast (such as Tyson)
1 pint strawberries, hulled and sliced
½ cup coarsely chopped pecans
Dressing
½ cup low-fat buttermilk
1 tsp. grated lemon peel
2 Tbsp. fresh lemon juice
1 Tbsp. Dijon mustard
¼ tsp. salt
¼ tsp. pepper

Directions
1. Divide spinach among four plates. Layer chicken pieces, strawberries and pecans on top of spinach.

2. Whisk dressing ingredients in a small bowl and drizzle on salad.

TIP: For extra flavor, toast pecans for 1—2 minutes in a dry skillet over medium heat. Cool before adding to salad. NUTRITION FACTS (per serving): 250 calories, 19 g protein, 22 g carbs, 12 g fat, 7 g fiber, 8 g sugar, 1,120 mg sodium
